Liquid culture: spirits

It is an alcoholic beverage obtained by distilling a liquid that has already fermented (or that already contains alcohol), in order to concentrate the alcohol and certain aromatic compounds. In short: first it ferments, then it is distilled to concentrate and refine.

Fermentation is the step in which microorganisms, mainly yeasts, produce alcohol from sugars. Distillation comes afterwards: using heat and condensation, it concentrates and separates the alcohol and aromas from that fermented liquid.

Practically any raw material with fermentable sugars will do: grains, fruit, sugar cane, agave, tubers or other vegetables. That is why there are families as different as whisky (grain), rum (cane) or tequila (agave).

It is mostly a matter of tradition and geography. “Whisky” is the usual spelling in Scotland, Japan and other countries; “whiskey” is more common in Ireland and the United States. As with almost everything in the world of drinks, there are exceptions.

It is a spirit whose main character comes from juniper. From there, each gin adds other botanicals — citrus, spices, herbs... — that give it its own aromatic profile.

It is a spirit made from sugar cane derivatives — molasses, juices or syrups — depending on the category and origin.

Agricole rum is traditionally made with fresh cane juice. Most other rums start from molasses or other by-products of sugar production.

It is a Mexican spirit made from blue agave, protected by its own designation of origin.

It is a category of Mexican spirit made with different species of agave or maguey, following traditional production methods.

No. Both start from agave, but the permitted raw materials, the production area, the production method and, of course, the profile on the palate are different.

That it has spent a certain amount of time in a maturation vessel — usually made of wood — where it gains colour, aroma, texture and flavour.

Aromatic and phenolic compounds that leave notes of vanilla, spices, caramel, nuts or toast, as well as softening the texture and giving structure.

Not necessarily. Age is one factor, but it is not everything: the raw material, the distillation, the type of cask, the climate of the region and the producer's judgement matter just as much or more.

In general, that the whisky is made at a single distillery from malted barley. The exact definition depends on the regulations of each category, so it can vary slightly.

That the bottle comes from a single cask, not from a blend of several.

Liquid culture: ferments

It is a drink in which microorganisms — mainly yeasts and bacteria — transform sugars and generate alcohol, acids, gases and other compounds. It is the step before (and sometimes the final step of) a great many drinks.

The term (“craftsmanship”) applies to beer produced by independent, small-scale breweries that prioritise quality, tradition and innovation over mass production.

Drinks made by fermenting fruit or fruit juices. Fermentation transforms the fruit's sugars into alcohol and into new aromas that were not in the original fruit.

It is a drink fermented from honey diluted in water, rather than from grapes, grain or fruit. It is probably one of the oldest fermented drinks in existence, and today it is made in styles ranging from very dry to sweet, still or sparkling.

A drink obtained by fermenting a sweetened liquid, usually tea, with the help of a community of microorganisms known as a SCOBY.

That it contains active microorganisms, or that it has gone through fermentation processes that keep influencing how it evolves over time, even after bottling.

The fizz can come from a fermentation that naturally generates carbon dioxide, from a second fermentation in the bottle, or from carbonation added afterwards.

Liquid culture: no & low alcohol drinks (NO-LOW)

It is the usual way of referring, collectively, to No Alcohol drinks (alcohol-free) and Low Alcohol drinks (with reduced alcohol content).

Although there is no single industry standard, at Destilo we consider a drink to be low alcohol (or Low ABV) when its alcohol by volume (ABV) is between 0.5% and 2.5%. We reserve the “alcohol-free” category for options ranging from 0.0% up to the usual technical limit of 0.5%.

There is far more variety than you might think: dry, bitter, herbal, spiced, acidic, saline, smoky or complex options.

They don't have to. You can use them as an alternative at a particular moment, but also enjoy them as a category in their own right, with their own references and pairings.

Our products

We have a very diverse catalogue covering all kinds of options and categories, including gluten-free, 100% vegan and no-added-sugar alternatives. As every drink is unique and we work with many different references, we recommend checking each product page directly, where we always detail all of its specifications and characteristics.

It depends on the type of drink. On each product page we tell you the best way to store it.
