Moncalvillo N4 — sweet high-mountain mead

€27,00

The same heather, calluna and honeydew honey from the Sierra de Moncalvillo (Daroca de Rioja, Rioja Alta) as the N3, gathered between 700 and 1,500 metres in mixed woodland of oak, beech and pine. Slow, cold fermentation in oak foudre (14–18 °C) and more than 12 months' ageing in French oak on the lees with bâtonnage. After ageing and before bottling, it is sweetened with heather honey to preserve the natural sweetness of this high-mountain terroir. More than 12 months' maturation in the sherry bottle.

Cobrizo, brillante y limpio.
