AMA No.405 Pet Nat — Organic White Tips & Green Tea (NA)

A naturally fermented sparkling tea, crafted by hand from Cui Min white tea (White Tips) grown on the Qingshan Peninsula, a remote, protected enclave at the heart of the Wuqiangxi reservoir, in the province of Hunan (China), at 750 metres of altitude and reachable only by boat. Its isolation has made this place an exemplary model of certified organic agriculture: 165 people live there, 85 work in cultivation and roughly 200 families lend a hand during the harvest. The project operates under Fairbiotea guidelines, with managers trained to Demeter standards, and maintains its own composting system and the Xiaojiaqiao school for the children of the producing families. AMA blends it with organic green tea and Basque spring water, refermenting naturally with precise microbial control.
