A naturally fermented sparkling tea, crafted by hand from organic black tea grown at Indulgashinna Village, in the province of Uva (Sri Lanka), harvested between 1,600 and 1,800 metres of altitude. It is the country's first estate to be certified organic (1987) and biodynamic (1999). The project provides work and services to more than 2,100 members of the community: it has its own school on the estate, a care home for the elderly and Fairtrade certification since 1992. Its summer-harvest Orange Pekoe lends structure and warm spice. AMA blends it with organic elderberry extract and Basque spring water, in a natural, ancestral refermentation.
Rosa salmón delicado, burbujas finas y sedosas. Fresas silvestres y frambuesas frescas se abren a notas verdes luminosas, mineralidad suave y una acidez limpia y crujiente. Boca lush, mineral, tangy, vibrante.
Presenta una afinidad natural con brasas vegetales, embutidos y moluscos al vapor. Su estructura y mordiente funcionan como contrapunto para carnes blancas. En mixología, se utiliza para fijar un color rosáceo orgánico y una columna vertebral de té negro muy definida. Servir entre 11–13 °C en copa de vino blanco. Este rango térmico, más templado de lo habitual, es imprescindible para liberar el alma del Orange Pekoe y su complejidad estival.
El saúco aporta fruta sin el dulzor habitual. Si quieres un aperitivo sin alcohol con credenciales reales.
