Slow, cold fermentation in oak foudre (14–18 °C), but aged for 9 to 12 months in chestnut casks on the lees with bâtonnage — a wood long traditional in the winemaking of the north-west of the Iberian Peninsula and Portugal, lending finer tannins and an oxidative character distinct from that of oak.
